Is it possible to assign a value to a variable in a template?

I’ve scoured the documentation, and I may just be stupid, but I can’t find the answer to this question.

Can I do something like this in my templates (ignore the pseudo code syntax, which is a result of not being able to find anything about this)?

{set foo = 7}

Foo = {foo}
