What hook to use for saving custom publish fields

I have an extension that has created a new publish tab. I have created a “publish_form_new_tabs_block” that adds two new from fields that I need to save for both new and edited entries.

What is the appropriate hooks for these. I am looking at the list, and don’t see a clear winner. Do I need multiple hooks for this?
