Different templates for different categories

I’m working on a site with events which I had planned to have in one channel organized by category. The problem is that different event types require different layouts. Should I create a separate channel for each event type, or is there a way to conditionally use different templates for different events? I’d appreciate any advice on how to set this up.

Are they different content types? IE - different fields needed for them? Or just different visual treatment?

If the latter, I’ve used custom category fields to store CSS classes/IDs or you can just do conditionals.

If the former, different channels.
