So what are some of the settings you ALWAYS change on a fresh install?

In no particular order:

- use cookies for both the frontend and the backend, no session ids
- enable template versioning, keeping 10 revisions
- remove the default theme, template groups, categories and the first weblog entry
- turn off trackbacks and RDF globally
