OK, we got this all figured out. It seems the vhost.conf file on the subdomain was not setup properly. All is in order now - and these directions are spot on.

Just wanted to post a quick thanks to everyone who has contributed to this thread.
I just finished setting up to run via SSL and found the answers to my issues here.

nek4life, you just saved me again. I was pulling my hair out and then stumbled across this article again 2 years later. I was missing the last steps on configuring the server to read the new vhost.conf files.
