Seems we’re getting quite a few switchers here in the forums as there are several threads going about Mac dev tools.
I tend to keep it simple…

Go to PimpMySafari for some plugins (Safri Source and Tidy for sure). Then search Google for “Safari Bookmarklets” and you’ll find a ton. I have too many to list.

MAMP is great for development
Add Headdress and you’ve got an insanely easy multi-site development platform
Coda for coding - loving it more every day
Transmit for FTP
Fireworks/Photoshop
Illustrator

If you do any PHP coding, Komodo IDE or Komodo Edit is handy. http://www.activestate.com
I also find the FireBug plugin for Firefox to be extremely useful when looking at sites.

Hi there,
You’ve moved across to Mac!!! How dare you!! 😊
I have used Macs all my life and would never even dream about touching another kind of computer.
Seriously though, welcome to the land of Macs.
Whilst I nearly always use Safari for everything I do check sites out using Firefox and then also run Parallels to emulate a PC and test sites on IE and Firefox on there also.
There is a quite good little extra for Safari called Tidy but if you use it on Safari b3 then there are a couple of weirdnesses (hmm methinks I just made a word up there) with it but nothing too bad.
MAMP is an absolutely excellent tool to use as you can test out your sites on your local computer before going live. An absolute godsend.
As for FTP I would suggest either Interarchy, Transmit or possibly Fetch. I prefer the ease of use of Interarchy but if you want better mirroring capabilities then Transmit beats it on that side of things.
Also don’t forget to try out Coda. Whilst some might think it a little childy in the way it works I have used it quite a lot as I now create the XHTML code for web-sites by hand as opposed to the way I used to work with using Golive and then Dreamweaver and Coda allows you to see straight away what your site will look like.
After that then the obvious Photoshop and other programs that are now ubiquitous with design all spring to mind.

My set-up:
Firefox with Web developer Toolbar and Firebug as must-have extensions
MAMP (or MAMP pro)
Transmit (FTP)
Textmate - BBedit (depending on my mood 😊 )
CSSEdit (can’t beat the live editing)
Photoshop
Omnigraffle (for wireframes)
Color Schemer Studio (for colour work)
Parallels desktop (for testing in IE6-7)
