I was wondering if there was a way to remove the br and p tags that are inserted automatically into the entries.

I use the paragraph to br plugin but now that I’m looking at the code, it messes up because I need it to not have any breaks between the different sections (title, summary, body etc).

Anyway of doing this?

Try “Formatting: None” instead of XHTML. And be sure to apply it retroactively to your articles by checking the appropriate box.
