I had to double check this, but at this time no - the RSS preferences are only for each forum, not per category. You could certainly put in a feature request for this, and it might be possible to do with some creative thinking and queries. If you want to try that route then I can move this to the how-to forum for you. =)

As a followup, in looking at the new forums with 1.6 that allows multiple forums via a drop-down, does each forum in that dropdown have a separate rss feed out of the box?

Each forum has preferences and a checkbox to enable an RSS feed as well as to enable HTTP authentication for the feed.
