Hi,
I’m developing a site that has products that need adding to a selection of categories.
Is it possibe for the categories to be a requiried option so the client won’t forget to add the product to a category.

Natively, no. You can set a default category in the channel prefs, and use a Publish Page Layout to put the category choice front and center on the Publish page.
I believe the 3rd party market has a required category offering - best to search devot-ee for that.
