Does anyone know how to use Channel Form to set the Entry Time?
I don’t want to set the date… just the time… perhaps with a dropdown menu for the hour and one for the minutes.

You could try the https://github.com/experience/dropdate.ee_addon addon which can output date/time fields to a form.
I believe it outputs separate select fields for day/month/year and optionally time but you could use some CSS to hide the unwanted fields?

I’ll take a look - although I notice they aren’t developing updates or offering support anymore.
