Hi Kristen,
Sure thing!
You need to enable HTML Email in Admin-> Email Configuration, then edit the templates in Design-> Message Pages-> Email Notification Templates.
That should hook it up.

I have modified those templates on a few projects in order to send HTML email, and it works great, but if you hit a snag, just let me know!
