Hi Luke,
Are you describing the use of the member profile tag? Your post is a bit vague on context.
You can try changing the setting at Members->Preferences: Auto-convert URLs and email addresses into links? Under the Private Messaging header, but that may not have an effect.
Other than that, I don’t know of a way to change the output of member email addresses. You might need to make a Feature Request for that.

sorry for the vague post. I am talking about the tag {exp:member_custom_data} tag. I did try to turn them off in the Members->Preferences with no avail. I came up with an ok work around but still think it would be nice to display an entry with the option to not have emails show as links.
I will put in that feature request. Thanks!
