We are looking to build a wiki using channels so we can have better control over things. Can anyone make any recommendations or has anyone done anything like this that can share how they did this? Any help is appreciated.

I’ve not done this but I’d probably setup one Channel with a bunch of custom fields for each “wiki” page content, plus aset of categories. Then use the Safecracker module for front end adding/editing.
It may also be worth looking into the Tag module as well for cross referencing data.
