I want to be able to set a default expiration date of one month after a given entry date. Is this not possible?

You might want to take a look over on Devot-ee.com to see if there is anything that might help.
http://devot-ee.com/add-ons/eevent-helper/ might not completely fit the bill, but see if it helps out.
