When an author edits an Open entry, is it possible to have that entry change to a different status (we use Pending instead of Closed) and have a moderator alerted by email that a change has been made? It works well when an entry is created, but we’d like to have it do the same thing when an entry is edited. Right now it looks like all edits are just posted live with no chance for an admin to moderate them.

You would need a third party add-on for the edit entry notifications. Try MX Notify Control

If you go into your Status group and select each status you can see that you can restrict status to members of specific groups. Just restrict the status of your group to pending only and when they are publishing that is the only status that will appear
