I’ve created my categories 1 by 1 in alphabetical order, but they are are showing in a random messy order.
Any way to reorder or force reorder them alphabetically?

I think you might be running into this bug (https://support.ellislab.com/bugs/detail/14821/).
What version of EE are you running?
