When displaying a calendar picker in my SAEF to select my entry date how do I add the field that shows what date/time I have picked?

The calendar only lets me pick the DAY and MONTH
?
How do I use the picker and also allow the user to pick the TIME

I am afraid there is no built-in time picker for the SAEF but you can use any of the available solution. (I’m quite fond of this one, personally).
