Okay - a systematic examination of the Drifter add-on and where it was being applied on the site has identified the cause of the problem which was - it turns out - only affecting two channels.
The issue was restricted to creating entries in a channel which featured a Drifter field that was itself only related to one channel (make sense?). Common sense I suppose but took some figuring out!
Basically then - if using the Drifter add-on make sure you don’t use it for fields that only relate to a single channel.

All good - just seems to have been an issue with the Drifter add-on when EE was updated from 2.1.0 to 2.1.1 (the author notes that Drifter extends Core EE classes, which is not officially supported by EllisLab).
