Addresses such as say o’[email protected] produce an ‘invalid email’ error when subscribing to a mailing list. Is this expected behaviour? A security setting somewhere?

As far as I’m aware apostrophe’s in email addresses aren’t widely supported. You can have full stops, eg .(JavaScript must be enabled to view this email address) ...

It’s how EE works, yes, and as such expected behavior. While apostrophes aren’t technically invalid I advise against using them. There’s an extensive discussion here.

Thanks - I did search but missed that thread. Sounds like a feature request to me - I can see that apostrophes are an inconvenience, but they are valid, and I don’t like the idea of telling people to change their email address because the computer doesn’t like it!
