If I create a new entry it shows up just fine - no problemo. BUT, if I edit an entry it then disappears… What gives?

You using any extensions that affect the publish form at all?
This sounds like an extension is interfering with something and causing corrupted data on the DB end.

I’m actually not using any extensions… Only using out of the box EE modules except for the one non-EE plugin I am using - ‘ImageSizer’ ... and it doesn’t help to disable that.

That’s some pretty bizarre behavior then, I’d make a support request so that the EE guys can investigate more thoroughly. This isn’t a normal occurrence and it’s something they can take care of better than the general discussion forum.
