I can’t really use the built in “Preview” because I’m using Structure. What’s the best way to build in preview capabilities so my client can see the new content before publishing?

you can use the native Live Look feature which allows you to preview the entry in a template of your choice. SO for example you would create a draft template to mimic your live one. Add some conditional logic around it so only your admin group can see it.
Issue here is that you are using Structure and the Livelook link appears on the edit view.
Alternatively Leevi has a Live Look add-on
