Well, i finally found this setting after 4 hours of searching though the incomprehensible Admin section of the control panel.

and my question is, how do you shut this off globally? I find it quite ridiculous that this is a setting to begin with since text should only be interpreted into html, in my opinion, if a custom field is specified as xhtml or if a wysiwyg editor is used. If i make a custom field and I specify that field as having NO FORMATTING. That should also mean that I don’t want some EE setting that is a level less specific than my format setting of “none” over-riding my field setting.

sorry for the rant, but this makes no sense to me 😊
If someone is still willing to help i’d really appreciate it!

There is no way to turn this off globally; you have to specify your preference for each of your weblogs. Having it this way by default makes sense to me, at least, since you can easily switch this setting off; furthermore, having it on gives you the benefit of encoded email addresses, which is otherwise a pain in the #%$*! to implement on your own.
