If you set the custom field formatting to None or Auto when creating a custom field, it doesn’t stick and it sets the formatting to XHTML by default. This is happening on text and textarea fields at least, though oddly it works on my custom wysiwyg editor field.
For reference, this is similar behavior to bug #10735 on build 20091211 and bug #9532 on build 20091023.
