If you have a category structure with subcategories any posts assigned to a subcategory are inherently also assigned to the subcategories parent category. This causes a dilemma if you only want to display posts assigned specifically just to a parent category. How is it possible to only display posts of a parent category and not it’s children?

If I understand correctly, the issue you’re having is that EE is auto-assigning the parent category when you select a child. You can turn that off in the Global Weblog Preferences:

Auto-Assign Category Parents
If set to “yes”, when new entries are submitted, the parent category will be automatically assigned whenever you choose a child category
