I have an input field for and entry called “start_date” using EE date field entry. I have another entry ,currently text input, “time_in_current_position” which is the amount of time between the ‘start_date’ and the date the entry is being saved. Is there a way to have EE calculate that difference and save to the entry field as a static Date.

Low’s Nice date plugin may work for you - http://gotolow.com/addons/low-nice-date/docs - it can output number of days/month/years between two dates.
