Starting with EE - Can I use statuses to trigger different page states based on date?

If I have a single page and I want to show certain content during 10/11/13 -> 10/18/13 then I want it to switch to a different set of content 10/19/13 -> 10/26/13.. then maybe it changes again after 10/27/13.

Is this something I would do using Statuses?  Or would I need to create my own date fields and handle the entry that way?

    Thanks!

Why not just set the publish and expiration dates on the posts and let EE handle it natively?

Mainly because its not so much that the entry will disappear.

Its more of 3 stages.  Pre - Event info… that then switches to Event day… then after the event it switches again.

Then yes - a date field and some conditionals are probably your friend.
