I have a couple of channels that I would completely like to be moved (data, fields, etc) to a different site under an MSM build. Can that be done somehow in the DB?

How much work is the change worth to you is the question. I’d think you’d best setup a copy of the site somewhere to experiment, then turn on output profiling and see what queries run when you create a channel. That should give some insight into the affected tables, and where you could look to change the site_id of the channel you want to change.
I have an install where I’d move a channel if it was easy, but have chosen to just live with it instead since I can easily pull the content correctly on the front end.
