I see in my settings that I can select “Crop” or “Constrain”.
I would like to use Crop but it is cropping from the top left, is it possible to force it to crop from the center?

I’m not sure if you get that much control with the built-in image uploader - but for in-template control, CE Image does give you that level of control with image alignment and offset while cropping.
