I’m using the Guest Member Group to allow users to preview limited functionality of our site.
I set Access for these templates to Member Group Guests = Yes—however it appears to be letting anonymous/non logged-in users access these templates.

The Guest Member Group is exactly that, anonymous/non logged in users
You should add your users to the Member Group and limit access to just that group and it should work for you.
