Using the EE contact email form module to create a contact form. I’m wondering if there is a way to customize the output the email that is sent to the recipient of the form? Or, include the form labels at least?
Anyone have any solutions to this?

Not a native EE solution, but you might consider Solspace’s Freeform module. It’s free, easy to install, and allows you to create multiple templates for the email side of things, including emails send to the admin for the form, but also to the user/submitter of the form, with lots of control of formatting, content, etc.
