I have a custom field that accepts a URL that I’m using to create custom links, however when I output the field with {news_url} in my template I get the HTML link, not just the URL and it’s breaking my template! I’m at a bit of a loss on this.

It’s a feature. You can turn it off here: Admin > Weblog Administration > Weblog Management > Edit Preferences > Automatically turn URLs and email addresses into links?
