I am currently hosting several EE sites on a VPS and plan on using EE almost exclusively in the future for all new clients.  I would like to improve performance by upgrading to a better VPS plan or to a managed dedicated server, but I don’t understand what the difference is, except that the dedicated server is a little more expensive.

I have a choice between a VPS plan that offers:

Minimum (2) 3.0 GHz Xeon, 8 GBs RAM
    Apache 2, CentOS 4
RAID 5, Full Server Backups -Weekly
    Backup/Restore Feature
    Unlimited Name-Based Domains
    Guaranteed Resources and Isolation
    Disk Space: 50 GBs
    Data Transfer: 800 GBs
    Guaranteed RAM: 640 MBs
    Burstable RAM: 4096 MBs

or a managed dedicated server that offers:

    Server Operating System: CentOS
    Server Processor: 2.8 GHz
    Number of Processors: Single
    Server Memory:  512 MB RAM
    Monthly Bandwidth Requirements: 1000 GB
    Number of Hard Drive/s: 1
Size of Hard Drives: 250 GB
    30 Domains
Backup option may be purchase separately

Which one should I choose?  If I choose the dedicated server should I upgrade some of the services? If so, which ones? or should I be looking for something else to host my EE sites on?

Check out MediaLayer. They run an Apache replacement called LiteSpeed that is supposed to run PHP 5 times faster than Apache. I have a CI app that I run on it, and it seems to run very quickly. To the user, it is just like Apache - it takes the same htaccess files and everything.
