Is there one of the WYSIWYG editors that is far better than the rest or close to the functionality of say Dream weaver for easily being able to modify content visually and high lighting of code?
Even better, is there a place that you can see a working example of each of the extensions.

You can find a list of the extensions here. These are all third-party software that have been integrated, via extensions, with ExpressionEngine. If you search for the name of the software (ie: TinyMCE) you’ll find their site and usually a demo (a general demo, not specific to EE), as well. =)

Is there a way to put an extension such as “Shift Fckeditor” on a hosted demo account without FTP access?

No, there is not; you would need to use EECore to test out extensions. =)
