I’m looking to setup EE on a community site that will (most likely) be ad-supported, but would be a non-profit endeavor other than that. The primary purpose of the site is NOT to make money. I just want to confirm that I would be able to use the personal version for this otherwise not-for-profit site. Displaying ads, selling t-shirts and accepting donations doesn’t make the site a for-profit site, correct?

That is correct, purefusion, it is the intent of the site that is important, and what it is supporting.  If you want more specific assistance on your specific project, please email sales with a detailed proposal and we’ll be happy to go over it with you.
