You’re registar should be able to offer you the option. I know GKG.net does.

HI Doug,
You can usually privatize after it’s registered. However if you don’t want anyone to know that you were previously affiliated with the domain, you’re out of luck.
People who use Domaintools.com can view all the previous registrant information for a website.
