Hi, Johnn.
There is a “Site Offline” flag (which can be used per-site with the Multiple Site Manager) - which takes the entire site offline. Superadmins can always view the site, of course, and you can allow certain member groups to view it offline.
Now, that’s an on/off switch (with a template to display a friendly message) - to take portions of a site offline would be a matter of modifying the template access so that no-one could view the template, and you’d probably want to have an “offline’ template they could view so that you could redirect those users there.

I think I was unclear in my original post, or I have not had enough coffee yet today to interpret your answer.
What I need to do is take a copy of my site once a month and put it on a flash drive for offline reading. I’d prefer not to turn it into a PDF - I’d rather keep it HTML. I don’t need my whole site scraped, just portions of it. Is this something EE can do?
Ok, while I’m at it. Couple more q’s for ya.
1) Is it easy to integrate AdSense into whole sections without handcoding each content page/entry? I guess that’s where templates come in?
2) Is there linktracking? I’d like to track # of clicks for various links I put up at the site.
3) Local bookmarks - User accounts: can users bookmark pages and have those appear in their profile/account space?
4) Is there a content rating feature or plug-in so visitors can rate my various articles?

Aha!
There is not a built-in feature for PDF’ing the site. However there are PHP solutions out there that could be turned into a module, I’d imagine. I don’t know of one that exists. There was a thread on this where I responded. I wonder if I can find it. Aha! Converting entries to PDF - the link to my site won’t work, but there’s lots of good information in that post, too.
So while yes, it’s possible in a variety of ways, there’s no built in “convert to PDF” button to use, so it would take some work to get it going. =)
Your other questions!
1) Yes, that’s done in the templates, and pretty easy. I actually put my Ads into a user defined global variable then call it: {advertisements} where I want it in the templates. That way I can remove the ads easily, or change them up, or what have you.
2) No, but solspace.com has a Favorites module that might be what you’re after. And along those lines, if it’s not, then our expandability with Modules, Plugins, and Extensions means it could be created.
4) Again, solspace.com has a Ratings Module - so that is, again, your best bet. =)
I hope I got ‘em all, let me know if there’re more.
