Hello,
I’m trying to set up a weblog with comments for the first time:
There are three different categories. I’ve created one channel, but
want to know if it’s possible to associate comments to a category,
or do I have to make three different channels instead.

Natively comments are tied to an entry. There might be an add-on to assign them to a category, but I haven’t seen one.
