I am running ExpressionEngine 1.6.8 and would like to update to the latest version. I was brought onto for this project.
Is there a way to backup the database first?

There isn’t a built-in database back-up tool. I believe in older versions there was.
I use PHPMyAdmin via the hosting control panel. If you have remote access to the database, you can use something like Sequel Pro (Mac) or a PC equivalent.
There is also a module called Backup. I haven’t tried it, but it looks like it should work.

The Backup module is excellent.
Use phpMyAdmin if you don’t have the backup module.
EE used to have a backup feature but it was removed. The removal was not welcome, but EllisLab apparently had good reasons for doing so.
