When an entry is made, is there a way to limit the number of categories that entry may be assigned to, for example –
I make an entry, the particular channel is assigned to 3 categories:
A.
B.
C.
Is there a quick way to only allow that entry to be assigned to one category?

No I’m afraid not. If you wanted an entry to be in a category but not a have a user choose it you could hide the categories in your saved Publish Layout and choose a default one in your channel preferences
You may find an add-on at devot-ee.com but I can’t recall seeing one
