I have a custom field with a URL in it with its formatting set to None. However whenever I’m trying to use it in my template it insists on wrapping the output in anchor tags. Since I’m trying to spit out an XML template this kinda ruins everything :\

Take a look at your Channel settings :
Admin->Channel Administration->Channels->Edit Preferences (Your Channel)->Channel Posting Preferences
Ensure that Automatically turn URLs and email addresses into links? is switched off. Hopefully that should get everything working for you.
