I am using 1.6.8 and when I try to edit Return email address for auto-generated emails
and click update it says Preferences Updated
but it returns to the previous email, thus I cannot change it.

Make sure your config.php file is writable. Also consider upgrading to 1.6.9, it’s a recommended security update.
