I need to remove an item from the Simple Commerce Module - if I choose “delete item” does the sales history get deleted as well?

Welcome to the forums
The answer is yes. Any deleted item that has purchase information attached to it is also removed. You will however have your PayPal history. You also have the option of exporting your purchases as a backup.
