i may have overlooked something in the docs, but where am i supposed to put all the assets in? I have a bunch of assets from a HTML Theme i’ve bought long ago, that i’m trying to modify for EE. And i’m certainly not going to copy-paste everything into some editor interfaces.

You can put them wherever works for you. I have an “/assets” folder on the server for exactly this, and just manage it with FTP, rather than through EE. It doesn’t need to know about every folder you use, if you don’t want it to.
If you do want to manage assets in EE, but don’t want the hassle of uploading everything through the EE interface, you can get around that by uploading all of the assets by FTP to a folder (or folders) which EE does know about, and then syncing the folder in EE’s file manager.
If you are talking about css files and images for the HTML theme, you can put them wherever you want. Some people might have an “assets” folder with folders inside for CSS, javascript, images, etc. Or maybe add a folder in the “images” folder for the theme images. And then maybe put HTML them CSS in SASS files or something to compress into one stylesheet. It’s really up to you.
Like others I tend to have an /assets folder with sub folders for various items, my own base install uses these folders:
/assets/css /assets/fonts /assets/js /assets/images /assets/ugc/images /assets/ugc/docs
This then keeps “assets” separate from the EE core/default folders.
