If you go into Admin > Custom Weblog Fields and change the default formatting option for a field that will normally only affect future entries you create.  You’re simply changing what the default selection will be for the future.

If you want to change the formatting option for existing fields as well, then you will need to make sure you select the checkbox to have the changes apply to existing entries whenever you alter the formatting of the custom field.
