We would like to have our blog posts automatically truncated to perhaps the first 250 words, with an automatic insertion of “read more” that takes the reader to the entire article posted within a category area of the site. Is this possible? And if so, where do I find the code to do this?

You can use the Word Limiter plugin to truncate the text, and then simply include the link in your template however you want it displayed.  There’s also the Word Limiter Plus plugin to help you do the latter half if you aren’t as comfortable with the HTML.
