is there a log were I can see the activities in the control panel (not only login and logout of users). i.e. who removed which entry or who did the last change to an entry

There’s the Control Panel Log, of course. The latest change to a template is also shown on the template’s page, but EE does not keep full records of all sysadmin tasks.
