What’s the difference between Global template variables and Freshvar variables?

It’s been puzzling me for a while and just wondering what are the differences and when should I use one over the other….

Fresh variables are parsed at an earlier stage and can, therefore, contain other EE tags and even regular PHP. Derek talks introduces them here.
